The first cooking with me video was a blast but I decided to step it up this time and try cooking sous vide. This is a cooking style that allows you to slow cook just about anything in a pot using a zip lock bag. I was fascinated when I learned of this cooking style and decided to try it out for the first time on camera! Try not to judge me too harshly on my weak cooking skills. I promise I'm striving to get better so constructive criticism is welcome!

  • LOL, the scallops you should have seared in a pan after you Sous Vide. Main fail is reductions of the sauce.. it needs way more time to reduce! Otherwise, good try.

  • Someone needs to buy measuring cups for you lol That was more like one cup of wine instead of a half. And that was a saucepan you used for the sauce. A saute pan is shallower with more surface area inside. 😉 But you did very well for a novice. Keep practicing and soon we can call you Chef Doctor Mike. 😄

  • if you want your scallops to taste a little better, maybe you should pan sear them just a little after the sous vide. Save some of the butter, olive oil and garlic mix, just enough for you to sear the scallops with. Don't sear too long or they will become rubbery, since they're already cooked in the sous vide. Use low heat/flame, and sear each side until they're just a little golden brown for that nice flavour. Using low heat in this situation ensures you that you have easier control over the heat and it reduces the chance of burning your food. For a little extra something to the scallops, hit them with a teeny bit of salt when they're still hot. And yes, maybe sear the carrots too, after you're done with the scallops. Hit them with a little teeny pinch of salt after searing. And if you have dried herbs to sprinkle on to them, go ahead and do it while everything is still hot. It's gonna be amazing.

  • Fun fact: Sous vide is most affective in cooking red meats. Because red meats are usually cooked to a certain degree of doneness. So sous vide gives it a more consistent temperature control in order to get the desired amount of doneness. Sous vide is not that affective in cooking chicken because chicken can cause salmonella if not cooked all the way through. The same goes with other poultry products with sous vide. According to my instructor(a 5 star chief and owner of a fine dining establishment) scallops should be cooked in butter until they are done just enough then they should be seared on both sides in order to get the right texture. Searing a scallop gives it an appetizing and not gummy texture. But sous vide would end up giving it a gummy texture and possibly not fully cooking the scallops.
